Concealed piping needs to have a clean out other than a floor drain per section 708.4 of the 2003 IPC. The Grease Trap needs to comply with chapter 10 of the 2003 IPC. B &B printing was in that place for over 30 years so you would also need a letter from the sewer district you are in that states you can re -use an existing grease trap that a printing company never used.
